You use a vacuum brewer when brewing cob coffee.

The coffee brewer consists of two flasks that, with the help of heat from a hotplate, create a vacuum that is essential for this type of coffee brewing. The water in the lower flask is brought to the boil and thus draws the coffee up into the upper flask. Here, the water absorbs the coffee’s flavour and aroma, where it then retreats back into the flask from which it came. Between the flasks is a filter that filters out coffee grounds.

You can also call a vacuum brewer a siphon or a coffee flask. It’s actually an old Bodum invention, but it’s probably not in as many kitchens as the Bodum piston jug.
